Baked Asparagus with Crumbs
A deliciously quick side dish topped with breadcrumbs!
|2 tsp||Olive oil|
|½ tsp||Black pepper|
|½ tsp||Garlic powder|
|¼ cup||Grated parmesan cheese|
|2 large||Beaten eggs|
|1||Preheat oven to 250°C. Line a baking sheet with aluminium foil and non-stick spray.|
|2||In a large bowl, combine panko and parmesan cheese.|
|3||Season with salt and pepper, and set it aside.|
|4||Working in batches, coat asparagus in flour, then dip into eggs and finally into the panko mixture.|
|5||Place asparagus onto baking sheet and bake for 10-12 minutes or until golden brown.|
For a non-vegetarian version, top the roasted asparagus with an over-easy or poached egg and sprinkle with prosciutto bits.
