Baked Asparagus with Crumbs

A deliciously quick side dish topped with breadcrumbs!

INGREDIENTS

500gTrimmed asparagus
2 tspOlive oil
½ tspSalt
½ tspBlack pepper
¼ cupBreadcrumbs
¼ cupPanko
½ tspGarlic powder
¼ cupGrated parmesan cheese
2 largeBeaten eggs

DIRECTIONS

1Preheat oven to 250°C. Line a baking sheet with aluminium foil and non-stick spray.
2In a large bowl, combine panko and parmesan cheese.
3Season with salt and pepper, and set it aside.
4Working in batches, coat asparagus in flour, then dip into eggs and finally into the panko mixture.
5Place asparagus onto baking sheet and bake for 10-12 minutes or until golden brown.
6Serve immediately.
For a non-vegetarian version, top the roasted asparagus with an over-easy or poached egg and sprinkle with prosciutto bits.
