Cheese Swiss Roll

INGREDIENTS

8Egg yolks (Cheese Swiss Roll)
3Egg whites (Cheese Swiss Roll)
100gCaster sugar (Cheese Swiss Roll)
½ tspEmulsifier (Cheese Swiss Roll)
60gAll purpose flour (Cheese Swiss Roll)
10gCornstarch (Cheese Swiss Roll)
10gMilk powder (Cheese Swiss Roll)
2 tbspCooking chocolate (Cheese Swiss Roll)
100gButter, melted (Cheese Swiss Roll)
100gCream cheese, room temp (Frost)
75gUnsalted butter, room temp (Frost)
100gIcing sugar (Frost)
½ tspVanilla essence (Frost)

DIRECTIONS

1Preheat oven to 190-200°C. Bast tray with butter and line it with baking paper. Set aside (Cheese Swiss Roll)
2Beat eggs, sugar and emulsifier until fluffy and pale. (Cheese Swiss Roll)
3Sift in flour, cornstarch and powdered milk. Fold evenly to combine. (Cheese Swiss Roll)
4Mix in melted butter slowly, fold gently till it combines. (Cheese Swiss Roll)
5Pour batter into a tray. Wiggle the tray to remove air bubble. (Cheese Swiss Roll)
6Bake it for 18-20 minutes at 190°C. In the meantime, melt cooking chocolate in microwave for 2 minutes. (Cheese Swiss Roll)
7Remove cake from oven, carefully invert onto a new baking paper. Remove the original baking paper from bottom of cake then roll the cake with the new baking paper in it. (Cheese Swiss Roll)
8Let it rest for 30 minutes. Unroll and let it cool. (Cheese Swiss Roll)
9Spread cream cheese frosting on the cake. Roll it tightly and drizzle melted chocolate before serving. (Cheese Swiss Roll)
10Beat butter and cream cheese for a few minutes. (Frost)
11Whisk in icing sugar gradually on low speed (Frost)
12Continue to beat the mixture until it’s creamy (Frost)
13Whisk in vanilla, and refrigerate. (Frost)
You may replace the cheese with whipped cream or jams.
