Greek Turkey Burger

INGREDIENTS

200gPlain Greek Yogurt
1 pcMedium Lemon
1/4 tbspMinced Garlic
1/4 tbspDried Dill
500gGround Turkey
6 pcsSun-dried Tomatoes (Halved)
1pcMedium Red Onion
50gFrozen Spinach
1/4 cupCrumbled Feta Cheese
1 tbspDried Oregano
1/3 cupBreadcrumbs
1 pcEgg
1 pcCucumber
6pcsHamburger Buns
Salt, as needed
Pepper, as needed

DIRECTIONS

1For the yogurt sauce, combine yogurt, 1/4 tsp minced garlic, dry dill, lemon juice (half of the lemon) and a dash of salt. Mix well and refrigerate.
2Defrost the spinach and squeeze out the moisture. Roughly chop the spinach as well as the sun dried tomatoes and 1/4 of the red onion.
3Combine the ground turkey with spinach, sun dried tomatoes, red onion, feta, 1/2 tsp minced garlic, dried oregano, egg, bread crumbs, 1/2 tsp of salt and some freshly ground pepper. Be sure to mix well.
4Form six patties using the mixture.
5Cook the burgers on a grill, skillet or over an open flame.
6Coat the inner sides of the buns with yogurt sauce, place a cooked patty and top with thin slices of red onion and cucumber.
Replace the patty with chicken if preferred.
