Lemon Chicken Rice

INGREDIENTS

1 Can (300g)Campbell’s® Condensed Cream of Chicken Soup
400gChicken, cut into small pieces
5 tbsp Lemon juice
1 tsp Grated lemon rind
6 cloves Garlic, finely grated
1 ½ cupsRice, washed and drained
1 cup Water
Salt and pepper
Coriander leaves (Optional for Garnishing)

DIRECTIONS

1Pour Campbell’s® Condensed Cream of Chicken Soup into a large bowl, add in chicken, lemon juice, lemon rind, garlic, salt and pepper. Mix well, cover by cling wrap and marinate for an hour in fridge.
2Place rice into a rice cooker, add in 1 cup of water and marinated chicken. Cook as per rice cooker instructions.
3Garnish with coriander leaves. Serve warm.
Chef tip: Brown rice or Basmati rice can be used for healthier option and adjust the water accordingly.
