Save the day with this simple but succulent, aromatic roast chicken recipe!
|Coarse Salt & Black Pepper, to taste|
|2 tbsp||Avocado Oil|
|1||Preheat oven to 230°C.|
|2||Rinse the chicken and pat it dry with paper towels, inside and out.|
|3||Salt and pepper the cavity, truss the chicken, tie up the wings and legs to keep it moist.|
|4||Place chicken on a roasting pan, roast it for 1 hour.|
|5||Remove it from the oven. Baste the chicken and let it rest for 15 minutes on cutting board.|
|6||Remove twine and cut the chicken into pieces.|
|7||Brush the meat with fresh butter, and serve it.|
|8||Drizzle avocado oil and season with salt and pepper.|
Coating the chicken skin with enough salt will result in crisp, salty and flavourful skin.
