Roast Chicken

Save the day with this simple but succulent, aromatic roast chicken recipe!

INGREDIENTS

1Whole Chicken
70-90gUnsalted Butter
Coarse Salt & Black Pepper, to taste
2 tbspAvocado Oil

DIRECTIONS

1Preheat oven to 230°C.
2Rinse the chicken and pat it dry with paper towels, inside and out.
3Salt and pepper the cavity, truss the chicken, tie up the wings and legs to keep it moist.
4Place chicken on a roasting pan, roast it for 1 hour.
5Remove it from the oven. Baste the chicken and let it rest for 15 minutes on cutting board.
6Remove twine and cut the chicken into pieces.
7Brush the meat with fresh butter, and serve it.
8Drizzle avocado oil and season with salt and pepper.
Coating the chicken skin with enough salt will result in crisp, salty and flavourful skin.
