Smoked Salmon Porridge

INGREDIENTS
| 200g | Smoked salmon |
| 10g | Young ginger |
| 1 cup | Rice |
| 8 cups | Soup stock |
| 2 sprigs | Spring onions, finely chopped |
| Salt, as needed | |
| Pepper, as neeeded | |
| Sesame oil, as needed |
DIRECTIONS
| 1 | Drizzle sesame oil on the smoked salmon. Arrange the salmon pieces on a plate, and top it with spring onions. |
| 2 | Wash and slice ginger into thin strips. Set aside. |
| 3 | Wash and soak rice for 30 minutes. |
| 4 | Transfer the rice into a pot, pour in the soup stock and bring to boil. |
| 5 | Lower the heat and simmer gently till cooked. Season with salt, pepper, and ginger. |
| 6 | Place the smoked salmon on the side. Serve. |
Add in shallots and poached eggs for extra flavour!
