Smoked Salmon Porridge

INGREDIENTS

200gSmoked salmon
10gYoung ginger
1 cupRice
8 cupsSoup stock
2 sprigsSpring onions, finely chopped
Salt, as needed
Pepper, as neeeded
Sesame oil, as needed

DIRECTIONS

1Drizzle sesame oil on the smoked salmon. Arrange the salmon pieces on a plate, and top it with spring onions.
2Wash and slice ginger into thin strips. Set aside.
3Wash and soak rice for 30 minutes.
4Transfer the rice into a pot, pour in the soup stock and bring to boil.
5Lower the heat and simmer gently till cooked. Season with salt, pepper, and ginger.
6Place the smoked salmon on the side. Serve.
Add in shallots and poached eggs for extra flavour!
