Strawberries Chocolate Cheesecake

INGREDIENTS

1 pintFresh strawberries
3/4 cupSemi-sweet chocolate chips
220gCream cheese (softened)
1/4 cupSugar
2 tbspButter (softened)
1 tspVanilla essence
1 1/2 tbspUnsweetened cocoa powder
1 cupWhipped cream/topping
3 tbspChocolate chips
3 tbspChocolate cookie crumbs

DIRECTIONS

1Wash strawberries well and let them dry. (Chocolate Cheesecake Stuffed Strawberries)
2Cut the tops off the strawberries and use a small spoon to hollow them out. (Chocolate Cheesecake Stuffed Strawberries)
3Melt the chocolate chips on medium heat for about 20 seconds, then turn up the heat every 15 seconds until the chocolate is melted. (Chocolate Cheesecake Stuffed Strawberries)
4Flatten the bottom of each strawberry by slicing off a thin piece. When the strawberries can stand upright, pat them dry with a paper towel. Dip the bottom of each strawberry into chocolate and then into the cookie crumbs. Place on a pan lined with parchment paper. (Chocolate Cheesecake Stuffed Strawberries)
5Melt the semi-sweet chocolate chips on medium heat for about 35 seconds, then turn up the heat every 20 seconds until the chocolate is melted. (Chocolate Cheesecake Filling)
6Run the mixer on medium to combine cream cheese, butter, vanilla, cocoa powder and sugar. Once fluffy, add in cooled chocolate and mix on low until smoothly combined. Add in whipped topping and mix well. (Chocolate Cheesecake Filling)
7Place chocolate cheesecake filling in a Ziploc bag. Pipe filling into the strawberries. (Chocolate Cheesecake Filling)
8Top with an additional piece of strawberry and serve immediately or refrigerate up to 4 hours. (Chocolate Cheesecake Filling)
Replace the chocolate chips with 3 tablespoons of melted white chocolate for a smooth, luscious delight.
