Thai-style Beef Salad

INGREDIENTS
300g | Rump steak |
2 tbsp | Groundnut oil |
1pc | Lime, juiced |
1pc | Red chilli, sliced |
1 tbsp | Brown sugar |
85g | Baby leaf salad |
140g | Beansprouts |
140g | Red grapes, halved (optional) |
DIRECTIONS
1 | Rub steak with 1 teaspoon oil to season. |
2 | Fry in a hot pan for 2-3 minutes each side, until it’s medium rare. |
3 | Transfer to a plate, cover with foil loosely and let it rest for 5 minutes. |
4 | Make the dressing by mixing lime juice, chilli, sugar and remainder oil. Mix until sugar dissolves. |
5 | Divide salad leaves, bean sprouts and grapes between serving bowls. |
6 | Thinly slice steak and add the juices to the dressing. |
7 | Toss them together and serve. |
This recipe can be served room temperature and it works well with grilled chicken or lamb too!
