Thai-style Beef Salad

INGREDIENTS

300gRump steak
2 tbspGroundnut oil
1pcLime, juiced
1pcRed chilli, sliced
1 tbspBrown sugar
85gBaby leaf salad
140gBeansprouts
140gRed grapes, halved (optional)

DIRECTIONS

1Rub steak with 1 teaspoon oil to season.
2Fry in a hot pan for 2-3 minutes each side, until it’s medium rare.
3Transfer to a plate, cover with foil loosely and let it rest for 5 minutes.
4Make the dressing by mixing lime juice, chilli, sugar and remainder oil. Mix until sugar dissolves.
5Divide salad leaves, bean sprouts and grapes between serving bowls.
6Thinly slice steak and add the juices to the dressing.
7Toss them together and serve.
This recipe can be served room temperature and it works well with grilled chicken or lamb too!
